Pasta the Way It Was Meant to Be

At Pasta One Two Three, we believe pasta should feel good in your body. It shouldn’t leave you bloated, heavy, or uncomfortable. That’s why we make dry pasta the way Italians have for generations, with just two ingredients: Italian grown whole wheat semolina flour and water. Nothing more, nothing less.

Our pasta is bronze cut, giving it a naturally rough surface that holds onto sauce beautifully. It is also slow dried at low temperatures, which preserves its flavor, texture, and digestibility. This is pasta the way it is made in Italy, not the way it is mass produced in most American grocery stores.

Why We Started

People often say that pasta makes them gain weight or leaves them feeling sluggish. But when you go to Italy, pasta is a part of daily life. People enjoy it regularly and still feel energized, comfortable, and healthy. We believe the difference is in the ingredients and the process.

We started Pasta One Two Three to bring that high quality, traditional pasta to more families here in the United States. Because when you use clean ingredients and time honored methods, your body responds differently. It feels good. It digests easily. It nourishes you.

What’s Actually in Your Pasta?

If you look at the ingredient list on most supermarket pasta, it might look simple. It usually says something like flour and water. But what it does not say clearly is what kind of flour is being used.

Most American pasta is made with enriched flour. That is flour that has been stripped of its natural nutrients and then artificially fortified with synthetic vitamins and minerals. Even pastas labeled whole wheat are often made from American wheat, which is higher in gluten, lower in nutrient density, and grown with more pesticides.

Our pasta is different.

We use 100 percent Italian whole wheat semolina flour. It is naturally rich in nutrients and fiber and never enriched or refined. It is cultivated with care and crafted with intention. We use bronze dies instead of Teflon molds, which gives our pasta that textured surface that sauce clings to. And we slow dry it at low temperatures to keep the flavor and nutrition intact.

You can taste the difference and more importantly, you can feel it.

Why It Matters

We are a small, family run business raising a daughter in a world where most food is made in labs or sprayed with chemicals. We do not believe in restricting everything. We want our daughter to be able to enjoy pasta, cookies, cake, whatever brings joy. But we want her to enjoy it with ingredients we trust.
